Which SmartOffice product you are using? If you are asking about SmartWord then there is a option " Remove Team Project" which breaks the link between document/template and the connected team project.

Yes I see it in Word. Do not see the option in SmartExcel.

Yes, it is not supported in SmartExcel4TFS, it you want to connect to a different team project, open a new instance of Excel and connect to a new/other team project.
